This Calphalon limited edition set is comprised of one 5-quart sauté pan, one 12-quart stockpot, and one 12-inch omelet pan—-just the right pans for family cooking. Calphalon's Commercial Hard-Anodized cookware wears a matte finish and is made of heavy-gauge aluminum to resist hot spots or warping. Though not nonstick like some Calphalon cookware, this super-size set is anodized for stick-resistance as well as hardness. Contoured, cast-stainless-steel handles resist heating and are triple-riveted for durability and balance, and metal utensils won't harm the surface. The 5-quart sauté pan is ample for frying a couple of chickens, braising corned beef, sautéing loads of vegetables, or browning meats. Or fill it with stew and stick it into the oven. At 12-1/2 inches in diameter by 2-1/2 inches high, this is a big pan that will satisfy many needs. Its handle has a hole for hanging on hook or peg, and a loop handle provides two-handed lifting. The 12-quart stockpot, great for soups, stews, and pasta, also stands up to deep frying. The looped handles are easy to grip and stay cooler than you might expect, thanks to V-shaped splits where they meet the pan, but it's still a good idea to keep hot pads nearby. The extremely sturdy all-metal construction provides the flexibility of taking the pan to the oven or broiler. And the 12-inch omelet pan, ultrathick along the bottom and sides to absorb the higher heat levels, protects delicate eggs from drying and burning. The sides of this pan are sloped to facilitate swirling the pan--gently glide an omelet around and out of the pan and onto the plate. The curved, cast-stainless-steel handle is easy to grip and stays cooler than expected (again, thanks to the V-shaped split where it meets the pan). The surface resists sticking and doesn't affect the flavor or color of food, and it is tough enough to handle stainless-steel utensils and vigorous whisking. Remember to hand wash all Calphalon pans.

Not a chef, but I love solid, reliable cookware5
I give this cookware a "Tim-the-Toolman Taylor" grunt because of how soliid it feels. I bought the set for [$$]. You can't buy one piece of this mighty cookware for that price. It heats evenly on my gas range and browns food well. Very satisfied.

No brainer5
I've used the Professional line for a few years now and liked it much better than the stainless or non-anodized aluminum cookware I had before. But the handle design gets hot pretty quickly so I started thinking about the Commercial line. I'd also lusted after the 5 Qt. saute pan for years -- after patiently collecting several pieces on sale at various places, I'd never seen that pan marked down very much in either line. Obviously many people are buying it at retail. When I saw this fantastic 5 piece set, at a price that was just over half the retail on the 5 Qt. saute, it was one of the most obvious no brainers I've seen. After using the Commercial line for a couple of months now, I'm looking for sales on other pieces to gradually replace all my Professional gear! The "cool-V" handles really do work well; it takes quite a while over fairly high heat before they get too hot to handle. Of course the reknowned Calphalon cooking surface is a given, and it's great.

5.0 out of 5 stars Get it while it lasts! (but not for low-maintenance cooks)
This special collector's set won't be here long. These three items each sell BY THEMSELVES more than the cost of this set. Talk about one of your all-time great deals. Calphalon Commercial is the top of the line, although you must remember that this is NOT nonstick. In fact, this version of Calphalon is intentionally sticky, because that yields superior carmelization.
If you follow the directions, however, cleanup is not a chore. That is -- properly heat the pans, deglaze with wine or somesuch (Makes mmm, mmm good sauces!), and use a little bon ami or Dormond cleaner for the tough stuff, and it comes off without too much trouble.

The big advantage of Calphalon, if you don't already have some pieces, is that it is 99.7 percent pure aluminum, which is an excellent heat conductor, and far superior to stainless steel, which is a very poor heat conductor. That means no hotspots, superior temperature control and efficient heating. Only copper is more efficient at conducting heat, but it weighs a ton and costs a pretty penny (!) to boot.

You can also put these items in the oven up to 800 degrees (!), and for stovetop use, the handles stay pretty cool, unlike the Professional line, which has very hot handles.

The surface of the aluminum in Calphalon is treated with a chemical bath that makes the surface harder than steel (you can use steel utensils with no problem) and safe even for acidic foots like tomato sauce, but you CAN NOT put them in the dishwasher, which will damage the coating and void the LIFETIME WARRANTY!

How can you go wrong? This offer is like buying the stock pot and getting everything else free. While the majority of my Calphalon is from the Professional line (hard to break old habits), the Commercial line is identical except for the handles, and can't be beat. DON'T CONFUSE EITHER OF THESE LINES WITH THE INFERIOR, CHEAPER CALPHALON!!! Although I've never worn any of my Calphalon out, I'm picking up another set or two of this offer for either future use or gifts. The stockpot will quickly become one of your favorites and the 5-quart saute pan is one of my most used pieces. The omelette pan can be somewhat unwieldly if you like to toss while cooking, but is still a wonderful item.
